Indian Chinese Hakka Noodles

Ingredients:

  • 300 grams noodles, I used egg Noodles
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 2-3 dry red chillies
  • 1 medium red onion, 100 grams, sliced
  • Mixed vegetables – I used cabbage slaw, broccoli and bell peppers
  • 2.5 tablespoons soy sauce
  • 1 tablespoon chili vinegar, or rice vinegar
  • 1 teaspoon hot sauce, like sriracha
  • 1/4 teaspoon black pepper powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon salt, or to taste
  • pinch white pepper powder
  • 1 teaspoon chili oil, optional

Recipe

  • Boil the noodles according to instructions on the package. I cooked my noodles for 2 minutes only.
  • Drain the noodles and wash under cold running water, this stops the cooking process.
  • Add 1/2 tablespoon of vegetable oil to the noodles and toss so that the noodles get lightly coated with the oil and don’t stick to each other. Set it aside.
  • In a wok heat 1 tablespoon vegetable oil and 1 tablespoon sesame oil on medium-high heat. Once the oil is hot add the minced garlic and ginger, sliced green chili. Saute for few seconds.
  • Add sliced onions and saute for a minute or two until the sides of the onion starts turning light golden brown.
  • Add in your mixed vegetables. I added cabbage slaw ( sliced carrots, cabbage, broccoli) and bell peppers. Cook for 1 minute on high heat. The veggies should be crunchy. Keep the veggies aside
  • Lower the heat and more minced garlic and a few dry red chillies. Let is splatter.
  • Add 1 teaspoon of coriander powder, soy sauce, chilli vinegar( or dry vinegar), a little bit of sriracha), black pepper.
  • Toss the veggies to combine well with the sauce.
  • Add the boiled noodles. Salt to taste and mix well with tongs

Stir Fried Tofu

Stir Fried Tofu

Ingredients:

  • 1 packet extra firm or firm tofu chopped into small cubes
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 teaspoons minced garlic
  • 4-5 dry red chilli
  • 2.5 tablespoons soy sauce
  • 1 tablespoon chilli vinegar, or rice vinegar
  • 1 teaspoon hot sauce, like sriracha or chilli oil. I used chilli oil
  • 1 teaspoon oyster suace ( optional)
  • 1/4 teaspoon black pepper powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon salt, or to taste
  • pinch white pepper powder

Recipe:

  • Chop the tofu in cubes.
  • In a big bowl, add one beaten egg and 1 tablespoon cornstarch or rice flour and coat the tofu in it. If you don’t want to use egg, use cornstarch so that when you fry the tofu, it’s crispy
  • Take a pan and add some oil to it. Add 1 teaspoon of minced garlic
  • Add the tofu and stir fry it till brown. Keep aside.
  • In the same pan, take a bit more oil if required. Add dry red chillies and garlic and fry
  • Add in your sauces – soy sauce, vinegar, chili oil (or sriracha), oyster sauce (optional). If you want your sauce to be little sweeter, add in a bit of honey or brown sugar. I like it spicy so I add in more of the chili oil.
  • Reduce the sauce and add the tofu
  • Coat the tofu in the sauce, fry for 1-2 minutes and switch off the heat.

Garnish your dishes with a bit of spring onion and serve.
