How to Cook Indian Chicken Curry Recipe

My quick and easy way to cook my special Indian chicken curry recipe

Hi everyone, being at home, has given me a lot of time to cook and try different things. I am definitely not an expert cook, but I love cooking things I have grown up eating – and Indian chicken curry is one such dish. I learn this dish from my mum and grandma. The spices make this dish super flavorful. So here is a quick recipe of it. To see a quick video of me cooking it, don’t forget to scroll below.

Ingredients

  • 3-4 chicken thighs and 4 chicken drumsticks. Make slits in the drumsticks
  • Olive oil ( or whatever oil you prefer)
  • 2 medium size onion
  • 2 pureed tomatos
  • 2 cloves garlic minced
  • One teaspoon ginger garlic paste
  • 1 bay leaf
  • 1/2 stick cinnamon
  • 2 cloves
  • 2 green cardamom
  • 1 black cardamom
  • 3-4 dry red chilly
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 2 teaspoon chicken curry powder or meat powder ( optional)
  • 1 teaspoon chilli powder ( kashmiri chilli powder is preferred. If not you can use normal chilli powder or cayanne)
  • 1/2 cup European yoghurt

Instructions

  1. Coat a large skillet with some olive oil
  2. Add minced garlic and dry red chillies to it. Once it splatters, add your dry masala – cardamom, cinnamon, bay leaf, etc
  3. Once slightly roasted, add your chopped onions.
  4. Add one teaspoon of ginger garlic paste to the onions
  5. Once onions are slightly brown and the smell of ginger garlic paste goes away, add your spices – turmeric, chilli powder, garam masala, coriander powder, cumin powder to it. (optional: to make it more flavorful add one teaspoon of chicken curry masala or meat masala to it)
  6. Dry roast the spices with the onion. Make sure your onion is cooked well.
  7. Once the oil seems to separate, add your chicken pieces and dry roast again for 10 mins at medium flame.
  8. Add your pureed tomatoes and cook for another 10 minutes on medium flame and another 15 minutes on low flame
  9. Add yoghurt to the mixture.
  10. Add salt to taste
  11. Cover and cook on low flame for 20 minutes.
  12. Garnish with cilantro or sun dried fenugreek
